Bruschetta Stuffed Avocado Boats

Ingredients

  • 1 avocado
  • 8 cherry tomatoes
  • 1/3 c. red onion diced
  • 1 Splash of balsamic vinegar
  • ½ tsp. dried oregano

Instructions

  • Dice the tomato and onion. Mix veggies in a small bowl with a splash of balsamic vinegar to coat. Add in dried herbs and stir together. Allow bruschetta to sit and marinate for 15 minutes.
  • Slice avocado and remove the pit. Spoon bruschetta onto avocado.
