Bruschetta Stuffed Avocado Boats

- 1 avocado
- 8 cherry tomatoes
- 1/3 c. red onion diced
- 1 Splash of balsamic vinegar
- ½ tsp. dried oregano
Dice the tomato and onion. Mix veggies in a small bowl with a splash of balsamic vinegar to coat. Add in dried herbs and stir together. Allow bruschetta to sit and marinate for 15 minutes.
Slice avocado and remove the pit. Spoon bruschetta onto avocado.
