Ingredients
1tbsp.olive oil
1green pepperdiced
1white oniondiced
1sweet potatopeeled & cubed
1can organic black beansdrained
1can organic fire roasted tomatoes
1can organic tomato sauce
1c.vegetable broth
1packet organic chili powder
Instructions
Chop the onion, sweet potato, and green pepper. Sauté with one tablespoon olive oil for approximately 8-10 minutes.
Drain beans then add beans, fire roasted tomatoes, and tomato sauce to cooked veggies.
Combine and cook for about 3-5 more minutes before transferring to slow cooker. Combine all ingredients in slow cooker including chili packet and one cup of veggie broth.
