Sweet Potato & Black Bean Chili
A vegan slow cooker recipe to warm you up and satisfy your tastebuds.
Servings: 6
Ingredients
- 1 tbsp. olive oil
- 1 green pepper diced
- 1 white onion diced
- 1 sweet potato peeled & cubed
- 1 can organic black beans drained
- 1 can organic fire roasted tomatoes
- 1 can organic tomato sauce
- 1 c. vegetable broth
- 1 packet organic chili powder
Instructions
- Chop the onion, sweet potato, and green pepper. Sauté with one tablespoon olive oil for approximately 8-10 minutes.
- Drain beans then add beans, fire roasted tomatoes, and tomato sauce to cooked veggies.
- Combine and cook for about 3-5 more minutes before transferring to slow cooker. Combine all ingredients in slow cooker including chili packet and one cup of veggie broth.
- Stir well and cook on high for 3-4 hours.
- Add desired toppings and enjoy!
