Autumn Stuffed Sweet Potatoes
A simple, delicious and festive side dish.

Ingredients
- 2 sweet potatoes
- ½ tbsp. olive oil
- ¼ c. yellow onion diced
- 1/3 c. mushroom diced
- 2 tbsp. dried cranberries
- ½ tsp. ground cinnamon
- ½ tsp. cashews
- 1 tsp. real maple syrup
- 1 tsp. poultry seasoning
Instructions
- Place sweet potatoes on a baking sheet and bake at 400 degrees / 204 C for one hour.
- Once cooled, carefully slice sweet potatoes and scoop out most of potato to mash with a fork. Let potatoes cool.
- Add all remaining ingredients to a bowl and stir together. Carefully stuff potatoes with mixture. Bake for another 10 minutes.
