Autumn Stuffed Sweet Potatoes

  • 2 sweet potatoes
  • ½ tbsp. olive oil
  • ¼ c. yellow onion diced
  • 1/3 c. mushroom diced
  • 2 tbsp. dried cranberries
  • ½ tsp. ground cinnamon
  • ½ tsp. cashews
  • 1 tsp. real maple syrup
  • 1 tsp. poultry seasoning


  • Place sweet potatoes on a baking sheet and bake at 400 degrees / 204 C for one hour.
  • Once cooled, carefully slice sweet potatoes and scoop out most of potato to mash with a fork. Let potatoes cool.
  • Add all remaining ingredients to a bowl and stir together. Carefully stuff potatoes with mixture. Bake for another 10 minutes.
