Bruschetta Stuffed Avocado Boats
A tasty and healthy lunch or side dish option.

Ingredients
- 1 avocado
- 8 cherry tomatoes
- 1/3 c. red onion diced
- 1 Splash of balsamic vinegar
- ½ tsp. dried oregano
Instructions
- Dice the tomato and onion. Mix veggies in a small bowl with a splash of balsamic vinegar to coat. Add in dried herbs and stir together. Allow bruschetta to sit and marinate for 15 minutes.
- Slice avocado and remove the pit. Spoon bruschetta onto avocado.
