Red Curry Veggie Pasta

Ingredients

  • 2 c. pasta
  • 2 c. broccoli
  • 2 c. mushrooms
  • 1 white onion
  • 11 oz. red curry sauce

Instructions

  • Place broccoli and mushrooms on baking sheet. Drizzle with olive oil.
  • Cook at 375F / 190C for 30 minutes
  • Drizzle sliced onion with olive oil, add freshly cracked black pepper. Sauté until carmelized.
  • Cook pasta until tender.
  • Gather all cooked ingredients to add to a large baking dish. Add jar of red curry sauce. Mix all ingredients together. Put back in oven to finish cooking. Bake at 375F/190C for 10 minutes or until warm.
