Red Curry Veggie Pasta
A quick and delicious vegan meal.
Servings: 4
Ingredients
- 2 c. pasta
- 2 c. broccoli
- 2 c. mushrooms
- 1 white onion
- 11 oz. red curry sauce
Instructions
- Place broccoli and mushrooms on baking sheet. Drizzle with olive oil.
- Cook at 375F / 190C for 30 minutes
- Drizzle sliced onion with olive oil, add freshly cracked black pepper. Sauté until carmelized.
- Cook pasta until tender.
- Gather all cooked ingredients to add to a large baking dish. Add jar of red curry sauce. Mix all ingredients together. Put back in oven to finish cooking. Bake at 375F/190C for 10 minutes or until warm.
