  • 1 sweet potato
  • 1/3 c. black beans
  • 1/3 c. tomato diced
  • 1 tbsp. red onion diced
  • 1 tsp. olive oil
  • 1 each Avocado slice


  • Bake sweet potato for 60 minutes at 350 F/176 C.
  • Combine toppings with olive oil and stir. Toss all the ingredients in a pot and cook until tender. Stuff sweet potato with the topping mixture.

Chipotle Sauce
