Southwest Black Bean Stuffed Sweet Potato

Ingredients
- 1 sweet potato
- 1/3 c. black beans
- 1/3 c. tomato diced
- 1 tbsp. red onion diced
- 1 tsp. olive oil
- 1 each Avocado slice
Instructions
- Bake sweet potato for 60 minutes at 350 F/176 C.
- Combine toppings with olive oil and stir. Toss all the ingredients in a pot and cook until tender. Stuff sweet potato with the topping mixture.
Chipotle Sauce

- 1 tbsp. lime juice
- 2 tbsp. water
- 1 chipotle pepper in adobo sauce
