
Sweet Potato “Toast”
A delicious option for breakfast or lunch.
Ingredients
- 1 sweet potato
- Olive oil
- Toppings of choice
Instructions
- Slice sweet potato lengthwise, or into rounds. Preheat oven to 400 F/ 204 C. Drizzle with olive oil and bake for 30 minutes.
- You can top your "toast" immediately, or store in the fridge for a quick breakfast throughout the week. Simply warm it in the microwave for approximately 30 seconds.
- Flavor ideas:
- Mediterranean: hummus, thinly sliced red onion, capers and tomato
- Mexican: guacamole, black beans, red pepper
- Sweet: peanut butter, drizzle of honey or pure maple syrup, topped with banana slices
