Tuscan White Bean Soup
An easy soup to throw together for a filling and healthy meal. Great for busy weeknights or cozy weekend meal.
Ingredients
- 2 cans white beans
- 1 onion diced
- 2 c. carrots chopped
- 2 c. celery chopped
- 8 oz mushrooms
- 1 c. kale chopped
- 3 cloves garlic minced
- 6 c. vegetable stock
- 1 tbsp. oregano
- 1 tsp. red pepper flakes
- 2 bay leaves
Instructions
- Add all ingredients to slow cooker. Cook on high for 4-6 hours or low for 8-10 hours.
