Vegan Pumpkin Pie Dark Chocolate Overnight Oats
A simple, healthy breakfast that’ll taste like dessert!

Ingredients
- ½ c. gluten-free old-fashioned oats
- ½ c. cashew milk
- ¼ c. dark chocolate chips
- ¼ c. organic canned pumpkin
- 1 tsp. chia seeds
- ½ tsp. pumpkin pie spice
- ½ tbsp. pure maple syrup
- Handful of pepitas for topping
Instructions
- Combine dry ingredients and stir well. Add cashew milk then stir to combine.
- Once mixture is ready, place in 8 oz. mason jar or glass bowl with a lid. Leave in refrigerator overnight then top with pepitas before eating.
