  • ½ c. gluten-free old-fashioned oats
  • ½ c. cashew milk
  • ¼ c. dark chocolate chips
  • ¼ c. organic canned pumpkin
  • 1 tsp. chia seeds
  • ½ tsp. pumpkin pie spice
  • ½ tbsp. pure maple syrup
  • Handful of pepitas for topping


  • Combine dry ingredients and stir well. Add cashew milk then stir to combine.
  • Once mixture is ready, place in 8 oz. mason jar or glass bowl with a lid. Leave in refrigerator overnight then top with pepitas before eating.
