Roasted Ratatouille

  • ½ eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 pint grape tomatoes
  • 5 tbsp. olive oil
  • 3 tbsp. garlic minced
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. freshly cracked black pepper


  • Chop the veggies and combine in a large mixing bowl. Mix olive oil, garlic, thyme, oregano, and black pepper in a small bowl. Combine seasoning mixture with veggies and stir evenly.
  • Preheat oven to 450 F/232 C. Place mixture on a baking sheet and bake for approximately 15 minutes. Put under broiler for 5 more minutes.
