Roasted Ratatouille

Ingredients
- ½ eggplant
- 1 zucchini
- 1 yellow squash
- 1 pint grape tomatoes
- 5 tbsp. olive oil
- 3 tbsp. garlic minced
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 tsp. freshly cracked black pepper
Instructions
- Chop the veggies and combine in a large mixing bowl. Mix olive oil, garlic, thyme, oregano, and black pepper in a small bowl. Combine seasoning mixture with veggies and stir evenly.
- Preheat oven to 450 F/232 C. Place mixture on a baking sheet and bake for approximately 15 minutes. Put under broiler for 5 more minutes.
